In my opinion, the Japanese restaurant is underrated in Markham. Due to COVID, the restaurant curre
ntly offers mostly take-out and limited seating in their cozy restaurant.
Hibiki Japanese Cuisine

I've been eyeing this place since stumbling upon their Instagram page. A classic Japanese menu that offers daily sushi specials for lunch and dinner varying on the fish. It has simple but has a selection of sushi set to premium donburi and ramen. I visited this place during their dinner service while being cautious due to the ongoing pandemic. I would recommend calling the restaurant to ensure you're able to dine-in.
The service was fast and had courteous staff taking your orders. "Clam in Sake broth" was a great appetizer to share. The clams cooked perfectly with the sake broth just lovely to indulge. The broth was clean and didn't have that fishy taste.
Then you had a golden fried tempura set. It had that great crisp you would expect from a great Japanese restaurant with various tempura vegetables.
The Sashimi Moriawas (18 Pcs Assorted Sashimi) was a great way to end your visit. The quality of the fish, shrimp and scallop was spectacular. Thickly sliced quality fish and the tuna was an explosion of freshness to your palette.
Overall a great visit and hope to be back to try more dishes.
